INGREDIENTS

  • 1 slice of bread
  • 1 ripe avocado + 1 lemon
  • 1 egg
  • 150g shimeji mushrooms
  • wild rocket
  • 10g almond flakes
  • Chili flakes

RECIPE

Step 1 : Toast your slice of bread

Step 2 : Tmash the avocado until you have a smooth texture, and season with a dash of lemon juice

Step 3 : Cook the shimeji mushrooms in a pan, with a bit of butter. Shimeji mushrooms can have a bitter taste when raw, but once cooked they get a lovely nutty flavor! Add the almond flakes in the pan so they get roasted a bit

Step 4 : Poach the egg in a sauce pan with a bit of vinegar

Step 5 : Assemble all ingredients on the toast : avocado first, topped with shimeji mushrooms and almonds, finish with the egg, the rocket salad and a bit of chili flakes on the top. Enjoy !
