Steak and chimichurri sauce

INGREDIENTS

  • 150gr sirloin steak

For the marinade

  • 1 garlic clove
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • 1/2 tsp chili flakes
  • Sea salt & black pepper

For the chimichurri sauce

  • 25g fresh parsley, chopped
  • 1 garlic clove
  • 1/2 tsp dried oregano
  • 50ml olive oil
  • 1 tbsp lemon juice
  • 1 tsp white wine vinegar
  • 1 tbsp honey

Sides

  • 1 pack asparagus
  • 1 box tomatoes

RECIPE

Step 1 : Start by prepping the marinade : combine all the ingredients in a bowl and mix.

Step 2 : Marinade the steak in the mixture for at least 1 hour in the fridge.

Step 3 : In the mean time, prep the chimichurri sauce : mix all the ingredients together in a food processor or blender, until having a nice smooth sauce.

Step 4 : 10 min before serving, remove the steak from the fridge and heat a frying pan coated with low calorie oil spray. Cook your veggies.

Step 5 : Sear the steak for 1-2 min on each side (or more if you prefer your steak well cooked). Then leave to rest for 5 min on a chopping board. Serve the steak topped with the chimichurri sauce and the veggies on the side. Enjoy 🙂
