courgette fritters & chicken teriyaki


  • 3 courgettes
  • 2 eggs
  • 40g parmesan
  • 4 tbsp flour
  • salt/pepper/olive oil
  • 160g chicken breast
  • teriyaki marinade
  • 1-2 tsp smooth peanut butter


Step 1 : Pour some teriyaki marinade on the chicken and stripe a bit of smooth PB on top of the chicken uisng a teaspoon. Cook in the oven 35min at 180 degrees.

Step 2 : Grate your courgettes and squeeze in a towel to remove the excess water.

Step 3 : In a big bowl, add to the courgettes all the other ingredients : parmesan, egg, flour,  salt/pepper and mix.

Step 4 : Using a tablespoon, put some of the mix into a pan, with olive oil spray, and flaten it (so it looks like a little pancake). You can cook 3 to 4 fritters at the same time in the pan. Cook 2-3 min on each side.

The recipe makes up to 10 fritters, each fritter being only 54 kcal (3.8g P, 3.4g C, 2.7g F). Enjoy !
